Shin beef (also known as shanks) on the bone comes from the leg of the animal and features a rich marrow bone at its center. This is a flavourful but tough cut that requires slow, gentle cooking to become tender and delicious. Perfect for hearty stews, braises, and the classic Italian dish Osso Bucco.
