The chuck is an exciting piece of meat, because, at the rib end, it contains a few inches of the same tender muscle that gives us ribeye steaks; however, it's also surrounded by connective tissue, fat, and a few other muscles that aren't so tender. The chuck is perfect for braising, and slow cooking. The fat adds lots of flavour and keeps the meat succulent. Ideal for stews and casseroles. Best simmered in a crock pot. 8 hours on low, or 4 hours on high.
