Beef Brisket Rolled Roast. The brisket is the breast/chest muscle of the animal. It is a coarse-grained meat that requires a low and slow cooking method (low temperature cooked for a long time). Cook slowly in a crock pot, in the oven or on a BBQ. This is the perfect cut for "pulled beef". Weights are approximated.
