Organic Beef Shin on the Bone
Deeply flavourful and perfect for slow cooking, our organic beef shin on the bone is a traditional cut that delivers rich, hearty results. The bone adds depth to your dish while the connective tissue breaks down into tender, melt-in-your-mouth goodness when cooked low and slow.
Sourced from grass-fed cattle raised on Pikiroa Organic Farm, our animals are never transported and are slaughtered humanely at home, ensuring a calm, respectful process that results in cleaner, better-quality meat.
This cut is ideal for:
-
Slow braises and stews
-
Osso Buco-style dishes
-
Bone broth is full of collagen and nutrients
Cooking Tip:
Cook for a long time and at a low temperature (3–4 hours) with herbs, vegetables, and stock or wine, until the meat is fork-tender and the marrow enriches the sauce.
